A soft, cheesy, gluten-free waffle that tastes like garlic bread. You in?
Coconut flour makes this fibre-filled and low-carb, as well as gluten-free. I served mine with a crisp green salad made with watercress, feta, celery, and avocado, dressed with lime juice and garlic vinaigrette.
This is gorgeous for a light lunch or filling snack. To make garlic butter, simply mix together softened butter, minced garlic, and dried/ fresh herbs (I used parsley).
This recipe can be gluten-free, low-carb, and nut-free.

Cooking time: 5 minutes
Ingredients:
– 2 eggs
– 1/3 cup coconut flour
– 1/2 cup milk
– 1 teaspoon baking powder
– 3 Tablespoons garlic butter
– 2 handfuls/ 4 thin slices cheese (I used edam)
– pepper, tabasco, green salad (to serve)
Method:
1. Beat the eggs together, then stir in the coconut flour, milk, and baking powder. Set aside. Preheat your grill and your waffle-maker.
2. Spoon half the batter onto the hot waffle maker and cook until golden-brown. Repeat with remaining batter. Place waffles on a baking tray/ dish and spread over garlic butter. Top with cheese.
3. Grill until the cheese is bubbly and melted. Serve with accompaniments of your choice, and enjoy! 🙂
