Vanilla & Pecan Bliss Balls

 

I have been culinarily deprived, as study for final exams has eaten up my last couple of months. Naturally, when I finished my last exam yesterday, I was straight back into the kitchen.

Eight hours.

Today, I didn’t sit down for eight blissful hours. Instead, my kitchen turned into a baking factory . . . followed by cooking dinner!

One of the recipes I concocted was for these bliss balls. No sweetener, low-carb, and utterly delicious, they almost make up for my aching legs right now 🙂

This recipe can be gluten-free, grain-free, egg-free, dairy-free, and low-carb.

Makes 15-20, depending on size

Preparation time: 20 minutes (plus chilling)

Ingredients:

- 1 1/2 cups thread coconut

- 1/2 cup almond meal

- 1/4 cup mild nuts of choice (I used almonds and cashews)

- 1 scoop vanilla protein powder (I used “Clean Lean Protein”, which is low-carb and only has two ingredients!)

- 1/2 teaspoon vanilla extract

- 3-4 Tablespoons thick coconut cream, to bind

- small handful pecans, roughly broken.

- desiccated coconut, to roll

Method:

1. Place the thread coconut in a food processor and blitz until fine. Add the almond meal and nuts, processing again until small crumbs form.

2. Add the protein powder and vanilla, pulsing to combine. Add coconut cream, a tablespoon at a time, until a sticky, crumbly dough forms. Throw in the pecans and process until chopped throughout (not too finely!).

3. Roll the mixture into balls, and coat these in coconut. Chill until firm, store in the freezer, and enjoy! 🙂
