Cinnamon Cream Soaked Oats

I have recently been craving cinnamon buns – those fluffy, soft, warm rolls filled with spice and slathered in sweet glaze. Oh, but my heart sinks! To think of the ugly mountain of fructose and refined-carby dough . . . Well, it’s not so pretty, is it?

Anyway, upon entering the beloved kitchen last night, I pondered my coming breakfast. Soaked oats were calling, and I had cottage cheese waiting to be gobbled up . . . As I pottered around, making my sister’s breakfast (‘spiced apple pie’ soaked oats), inspiration struck. Cinnamon. Cream. Oats. Yes!

The wholegrain rolled oats become softened overnight, soaking up liquid and becoming more easily digested. Somehow, unlike quick-cooking oats, they retain a certain chewiness after their soaking – which combines perfectly with the cinnamon cream! By cream, I really just mean cottage cheese, milk, and Greek yoghurt (in other words, a load of protein and calcium!). Add a good swirl of blood-sugar-controlling cinnamon, and you’re in for a breakfast treat.

So, yes, my Cinnamon Cream Soaked Oats were inspired by cinnamon buns. Not to say they taste that similar – these are like pudding, and those are like bread – but my craving was satisfied all the same. Anyway, now I just have plans for some good-quality, flour-free, low-fructose cinnamon buns. Oh, this experimenting will be fun! Until then . . .

This recipe can be gluten-free, egg-free, and nut-free.

Preparation time: 10 minutes (plus refrigeration)

Serves 1

Ingredients:

– 1/3 cup cottage cheese

– 2 Tablespoons Greek yoghurt

– a little over 1/2 cup milk of choice

– 1/2 teaspoon cinnamon

– 1/2 cup wholegrain rolled oats (or use gluten-free if needed)

– 1 teaspoon rice malt syrup

– 1/2 teaspoon psyllium husks

– extra cinnamon, to serve

Method:

1. In a blender, blitz the cottage cheese, yoghurt, milk, and cinnamon until smooth and creamy. Pour this over the wholegrain rolled oats in your serving bowl, and stir in the syrup and psyllium. Place (covered) in the fridge to soak overnight.

2. The next morning, stir in more milk if you’d like a thinner consistency. Swirl through some extra cinnamon, and enjoy! 🙂
