Didn’t think keto caramelisation was a thing? Think again. These nuts are sweetly spiced and certainly nice, sans sugar and excess carbs.
One note to the wise, however – if you don’t want the nuts to clump together, spread them out on a baking-paper-lined plate or tray to cool. I threw the nuts directly out of the pan and into a ramekin. Though I did quite enjoy breaking apart the clusters, you may prefer your nuts singly sumptuous.
This recipe can be gluten-free, grain-free, egg-free, dairy-free, and vegan.
Makes 1 cup
Cooking time: 10 minutes
Ingredients:
– 1 Tablespoon coconut oil
– 1 Tablespoon granulated stevia (I find “Natvia” works well here)
– 1/2 teaspoon cinnamon
– 1 cup (raw) mixed nuts
Method:
1. Melt your coconut oil over medium-high heat in a frying pan. Add the stevia and cinnamon and heat until the stevia is melted.
2. Toss the nuts into your pan and cook, stirring constantly, until they are stickily coated and browning. Immediately remove them from the pan and allow to cool slightly (see above), then enjoy! 🙂
