These are deliciously healthy, and the chocolate is definitely acceptable. For breakfast. Oh, yah.
The wholegrain, filling oats provide healthy carbohydrates, and the psyllium husks thicken and fiberise. I love oats for breakfast – especially more digestible soaked ones – as they keep me going for hours, and are incredibly healthy. Oats help lower cholesterol, improve insulin sensitivity, reduce the risk of Type 2 Diabetes, and control blood pressure. Add some chocolate, and I’m a happy muncher.
This recipe can be gluten-free, dairy-free, vegan, egg-free, and nut-free.
Preparation time: 5 minutes (plus refrigeration)
Serves 1
Ingredients:
– 1/2 cup rolled oats (use gluten-free if needed)
– pinch salt, optional
– 2 Tablespoons cocoa powder
– 1-3 teaspoons dextrose
– 1/2 teaspoon vanilla essence or a pinch ground vanilla bean
– 1/2 teaspoon psyllium husks
– 2/3-1 cup milk of choice
– 1/2 teaspoon cinnamon, optional
Method:
1. Mix all ingredients together in a serving bowl, adding more milk to thin if necessary (the oats should look kind of drowned).
2. Leave in the fridge overnight (covered), top with more milk/ cinnamon/ cacao nibs/ nuts if desired, and enjoy! 🙂
