This breakfast bowl incorporates a variety of flavours I associate with Christmas – orange, rum, spices, and nuts. Around this time of year, why not stuff yourself with as many of these as possible? Sure, I know Christmas has already passed – but this is a great way to remember the good old feasting days as you stick to your New Year’s resolutions of living a healthier, low-fructose life (I’m not the only one, am I?).
Along with being deliriously delicious, this is packed with protein, fibre, and healthy fats. How could you say a breakfast rich in coconut, nuts, psyllium, seeds, and spices isn’t healthy? That’s right. You can’t.
Feel free to use any nuts you like – I chose pecans, walnuts, brazils, almonds, and hazelnuts, because they seem so Christmassey. But maybe I’m just deluded! Replace the yoghurt with more milk or coconut cream, if you’re vegan. If you want a thicker constistency, just add more coconut flour or refrigerate overnight! In fact, the latter is probably best suited to those of you who need a quick breakfast on the run. Not to say this isn’t quick enough – you just toss the ingredients in a bowl, stir, and eat!
Don’t you think the goji berries and pumpkin seeds look so lovely together? Surely they scream Christmas to me.
This recipe can be gluten-free, vegan, dairy-free, and egg-free.
Preparation time: 2 minutes
Serves 1
Ingredients:
– handful nuts of choice
– sprinkling pumpkin seeds
– zest of 1/2 orange
– 2 Tablespoons coconut flour
– 1-2 Tablespoons thread coconut
– 1/2 teaspoon cinnamon
– 1/4 teaspoon mixed spice
– pinch allspice
– 1/2 teaspoon psyllium husks
– 1-2 teaspoons flaked bran (optional)
– 1 cup milk of choice (I used coconut and dairy)
– 3 Tablespoons yoghurt (or coconut cream/ more milk)
– few drops rum essence, optional
– 1/2 teaspoon vanilla essence/ pinch ground vanilla bean
– goji berries, extra seeds/ orange zest (to garnish)
Method:
1. Combine all ingredients except garnishes in a bowl. Top with garnishes, and refrigerate if you want it thicker (or eat straight away). Enjoy!
