I made a similar version of the ‘base’ of this shake for my “Peanut Butter Hot Chocolate” (see the recipe in “Drinks”). I made a sort of chocolate ‘custard’ using psyllium husks to thicken it – weird, but healthily good!
This shake contains fats, fibre, and protein, so naturally . . . I had it for breakfast! True story, man. But when I list its ingredients, this kind of makes sense: milk, coconut cream, psyllium, peanut butter, milk powder, cocoa . . . Healthy? Yes. Go with it!
I recently bought a cute mason jar with a straw attached to the lid. Don’t you love it? Well I do, so I suppose that counts for something! Since drinks in mason jars seem to be fadishly ‘all the rage’ these days, I decided to give it a go. I like it.
I topped my thickshake with coconut cream, but yoghurt or whipped cream would also be delicious. I chose to blend in low-fructose chocolate chunks (see my recipe in “Treats”) but if you don’t have any on hand, just add more cocoa to the ‘custard’ base.
This recipe can be gluten-free, vegan, dairy-free, and egg-free.
Preparation time: 15 minutes (plus chilling)
Cooking time: 5 minutes
Serves 1-2
Ingredients:
– 1/3-1/2 cup milk of choice
– 2 Tablespoons coconut cream
– 3/4 teaspoon psyllium husks
– pinch salt
– 2 Tablespoons cocoa powder
– 3/4 cup milk of choice, extra
– 1 Tablespoon peanut butter
– 2 Tablespoons milk powder
– 1 teaspoon dextrose (I omitted)
– sprinkle dark chocolate chunks (optional), see above
– extra coconut cream/ whipped cream/ yoghurt, to top (optional)
Method:
1. The night before you want to make this, pour the first measure of milk into an ice cube tray and pop into the freezer.
2. Combine the rest of the ingredients (except chocolate and extra coconut cream) in a saucepan and place over a medium heat. Whisk/ stir constantly until super-thick (5 or so minutes). Leave to cool slightly, then transfer (covered) to the fridge overnight.
3. The next morning, place the milk cubes, custard mixture, and chocolate chunks (if using) into a blender. Blend until smooth, pour into a glass (or jar!), and top with coconut cream if desired. Enjoy! 🙂
