Coconut Chia Bread

This low-carb bread is fluffy, soft, moist, and delicious. It’s perfect for toasting or used as the base of a superfood sandwich!

Guar gum was used to help bind the ingredients – sometimes, gluten-free bread can be pretty crumbly. Psyllium adds heaps of fibre, as does the coconut flour. Chia seeds bring protein and omega-3s, eggs more protein, and coconut cream fat.

This bread is great with sweet or savoury meals, or just by itself. Make it, quickly – it’s so easy!

This recipe can be gluten-free, dairy-free, low-carb, and nut-free.

Makes 1 loaf

Preparation time: 5 minutes

Cooking time: 30 minutes

Ingredients:

– 5 eggs

– 3/4 cup coconut flour

– 1/2 cup coconut cream

– 3/4 cup water

– 1 Tablespoon chia seeds

– 1/2 teaspoon guar gum

– 4 teaspoons baking powder

– 2 Tablespoons psyllium husks

Method:

1. Preheat your oven to 180 degrees Celsius. Line a loaf tin with baking paper. Whisk together all ingredients in a large bowl and pour into the tin.

2. Bake in the oven for 25 minutes, or until the top is golden brown and an inserted skewer emerges clean. Cool on a wire rack, slice, and enjoy! 🙂
