Rich, creamy, and darkly chocolatey, this is truly delicious. Somehow, it seems impressive – despite the fact that it is pretty much just fancy grits.
Don’t let its baby-food likeness put you off, though. I suppose this has a texture similar to that of custard – smoothly dreamy, yet slightly nibbly with the semolina grains.
This pudding is has protein from milk, fat from cream, and carbohydrates from the semolina to keep you nicely full. Antioxidants are provided by cocoa, and calcium by the dairy.
You can serve this warm, as soon as the cream has been added after cooking. However, I prefer to chill my pudding so it firms up a bit.
This recipe can be egg-free and nut-free.
Serves 2
Preparation time: 5 minutes
Cooking time: 2 minutes
Ingredients:
– 1/4 cup semolina
– 1 cup milk
– 4 Tablespoons cocoa (you can use less)
– 2-3 Tablespoons dextrose, as desired
– 1 teaspoon instant coffee granules (I used decaf)
– 1/3 cup cream
– orange zest, to garnish
Method:
1. Stir together all ingredients except the cream in a medium, microwave-safe bowl. Microwave on high power, uncovered, for 1 minute. Stir and cook for a further minute.
2. Mix in the cream and spoon into small glasses or ramekins. Eat immediately, or chill in the refrigerator. Decorate with orange zest, if desired, and enjoy! 🙂
