Ginger Lime Gummies

Do you love gummy bears, jelly, and other wobbly confections? I have never been a massive jelly fan, but chewy gummies always held an appeal. These ones are the ‘adult’ version – they lack the bright, artificial colours and fake taste. Instead, these incorporate more delicate, sophisticated flavours.

Gelatin has become quite popular due to its supposed health benefits. It may help skin, hair, and nail growth, healthy joints, improve digestion, boost your skin-improving collagen, and contains protein. These gummies are a tasty way to munch some of this ‘superfood’!

I didn’t sweeten mine too much, because I lack the taste for lollies. However, if you’re planning to feed these gummies to child skeptics, you may consider increasing the amount of rice malt syrup! For me, though, I like mine more gingery.

Usually, homemade gummies require fructose-filled fruit juice. I opted for this low-fructose flavour combination – although it may sacrifice fruitiness, it remains spicy, sweet, and exotic.

This recipe can be gluten-free, grain-free, dairy-free, egg-free, and nut-free.

Makes a medium jar full

Preparation time: 20 minutes (plus refrigeration)

Ingredients:

– 1 1/2 cups water

– 2 cm x 2 cm x 3 cm piece of ginger, grated

– 1/4 cup gelatin powder

– 3-6 Tablespoons rice malt syrup, as desired

– 2-3 Tablespoons lime juice, as desired

Method:

1. Bring the water and ginger to a boil in a medium saucepan. Remove from heat and whisk in the gelatin until dissolved. Whisk in rice malt syrup and lime juice, to your taste, and strain this mixture into a bowl.

2. Spoon the strained liquid into gummy moulds (I used chocolate/ ice cube moulds), or into a square glass/ porcelain dish. Place in the fridge for 3 hours until set. Unmould (or cut into cubes) and store in a jar in the fridge. Enjoy! 🙂
