Low-carb Deconstructed Tiramisu

I have a never-ending love for tiramisu. It’s just so decadent - yet somehow light enough to merit seconds.

Smoky with coffee, enriched with chocolate, and über creamy, this stuff is la caramba! I’m not sure of the exact carbohydrate count, but this definitely makes ketogenics fun.

I’ve said it serves 3-6 people. I suppose it depends on if you want two lots each. I definitely did!

This recipe can be gluten-free and nut-free.

Serves 3-6

Preparation time: 15 minutes

Cooking time: 10 minutes

Ingredients:

- 2 eggs

- 1 Tablespoon coconut flour

- 200 grams cream cheese

- 1 teaspoon decaf coffee powder

- 1 Tablespoon hot water

- 200 ml cream

- 1 teaspoon vanilla essence

- stevia powder, to taste

- 1 Tablespoon cocoa powder, plus extra for dusting

- cacao nibs and yoghurt, to garnish

Method:

1. In a bowl, whisk together the eggs and coconut flour. Add a third of the cream cheese, and mash/ whisk in until mostly smooth.

2. Heat a small, non-stick pan on the stove. Spread heaped Tablespoons of the mixture on the pan, cooking until golden. Carefully flip, cook the other side, and repeat with the rest of the mixture.

3. Cool the rounds on a wire rack. Meanwhile, place the remaining cream cheese in a food processor with the cream, vanilla, and stevia. Process until smooth.

4. Place the rounds in 3 (or 6!) serving glasses, then spoon over half the cream. Add the cocoa to the remaining cream and blitz to combine. Distribute the chocolate cream in the glasses.

5. Garnish with cacao nibs, cocoa, and yoghurt. Enjoy!
