I got the basic recipe for the base from Pinterest – http://terrastips.blogspot.co.nz/ – and was so thrilled with the results. Gooey, cheesy, stretchy pizza crust without all the carbs!
Top however you like – I used sliced chorizo salami and olives.
And extra cheese.
Because, well, why not?
This recipe can be gluten-free, grain-free, nut-free, and low-carb.
Serves 4
Preparation time: 15 minutes
Cooking time: 20 minutes
Ingredients:
– 2 cups grated mozzarella cheese
– 1 cup grated Edam cheese
– 3 eggs
– good grinding black pepper
– 2 Tablespoons tomato paste mixed with 1 Tablespoon water
– pizza toppings of choice
Method:
1. Preheat your oven to 200 degrees Celsius (fanbake). Line a baking sheet with baking paper. Mix together the cheeses, eggs, and pepper, and spread out on the sheet into a large circle/ rectangle.
2. Bake for 10 minutes, or until golden-brown. If you’re assembling the pizza later, transfer the base – paper and all – to a wire rack.
3. When you’re ready to eat, spread the base with the tomato paste mixture. Sprinkle on your favourite pizza toppings, and heat/ grill in the oven until hot and browning. Enjoy! 🙂
