I love pizza for breakfast. Please tell me I’m not alone . . . Well, if that’s the case, you can still enjoy this as part of dinner or lunch. But for me: breakfast all the way.
Herby egg provides the ‘base’ for this cheesy little pizza, so it contains far fewer carbs than the normal, processed-white-floury stuff. If you’re not trying to cut carbohydrates, this is still much faster to prepare.
Oh, and it’s tasty! After this little Italian circle of bliss, you’ll be singing “Magnifico!” for the rest of the day. I found cute, mini salami sticks in the refrigerator section of my local supermarket, but if you only have regular, that’s perfectly fine.
This recipe can be gluten-free, grain-free, low-carb, and nut-free.
Serves 1
Preparation time: 5 minutes
Cooking time: 5 minutes
Ingredients:
– 1 egg
– pinch dried marjoram or italian herbs
– good grinding black pepper
– handful grated cheese of choice
– 1 mini salami stick, sliced (or a few regular slices)
– chilli powder, to sprinkle (optional)
Method:
1. Beat together the egg, marjoram, and pepper. Pour into a small, non-stick frying pan over a medium heat. Cook until almost set.
2. Sprinkle over the cheese and salami slices. Cook until melted and carefully loosen the bottom with a spatula. Slide onto your serving plate, sprinkle over chilli if desired, and enjoy! 🙂
Of course, you can eat it in slices with your hands, too . . .
