Chocolate Brownie Pudding

Beans! I’m sure you’ve heard of black bean brownies, the fad that took over the health-food world for a while. Well, this uses the same principles, but you won’t end up with any tasteless and dry slice. This thing is rich!

I served mine with cream and yoghurt poured over. The steamy pudding (just look at it!) and cool dairy . . . I am in peace.

The black beans provide plenty of fibre, protein, and healthy carbohydrates. Eggs are rich in protein, minerals, lutein, and vitamins; butter adds satiating fats; cocoa boosts the antioxidants. You may never feel quite so guiltless after indulging in a bowl of chocolatey bliss!

I don’t really know how to describe the texture of this – something crossed between a sponge and a gooey brownie, perhaps. The method is like that for making self-saucing pudding, but the results are quite different.

This recipe can be gluten-free, and nut-free.

Serves 4

Preparation time: 15 minutes

Cooking time: 30 minutes

Ingredients:

– 1 x 400 grams can black beans, drained and rinsed

– 2 Tablespoons rice malt syrup

– 2 Tablespoons dextrose

– 2 eggs

– 1/2 cup cocoa powder

– 2 teaspoons baking powder

– 3 Tablespoons coconut flour

– 30 grams butter, cubed

– 1 heaped Tablespoon cocoa powder, extra

– 1 heaped Tablespoon dextrose, extra

– 3/4 cup boiling water

– cream, yoghurt, coconut, etc. (to serve)

Method:

1. Preheat your oven to 200 degrees Celsius. Place the beans and rice malt syrup in a food processor. Blitz until completely smooth. Add the dextrose, eggs, cocoa, baking powder, and coconut flour, and process until combined.

2. Grease a 20 cm round oven-proof dish with butter. Spread over the chocolate batter. Dot the butter on top. Mix together the extra cocoa and dextrose, and sprinkle over evenly. Carefully pour over the boiling water.

3. Bake in the oven for 30 minutes, or until the brownie pudding is risen and spongy. Remove from the oven and let cool for 5 minutes before serving. Enjoy! 🙂
