After my success with a microwaved, “Double Chocolate Peanut Butter Cookie” (see my recipe in “Desserts”), I decided to make a simpler – though equally delicious – and more traditional version.
Some people cannot get through weird cookie flavour variations, and they stick to the good old chocolate chip. Sweet, buttery, and vanilla-scented, this chocolate-studded cookie is truly the grandmother of all cookies.
Using Lindt 90% dark chocolate only provides around 0.65 measly grams of sugar in the one square. Not something to worry about too much, considering fructose only makes up half of this!
Preparation time: 5 minutes
Cooking time: 2 minutes
Ingredients:
– 1 Tablespoon butter
– 1 Tablespoon dextrose (I used less)
– 1 egg yolk
– 1/2 teaspoon vanilla essence
– 1/4 cup plain flour
– 1/3 teaspoon baking powder
– 1 (10 grams) Lindt 90% dark chocolate, chopped
Method:
1. Place the butter in a small, microwave-safe bowl and microwave on high power until melted. Stir in the remaining ingredients except chocolate, until combined. Fold in most of the chocolate.
2. Stuff the dough into small ramekin (or mug) and press remaining chocolate on top. Cook in the microwave on high power for 40-60 seconds, until the chocolate is melted and cookie risen.
3. Serve hot with cream, if desired. Enjoy! 🙂
