Creamy Chocolate Nut Bowl

What a rich and creamy breakfast! I decided to throw together some of my favourite foods for super satiety and flavour, and I ended up with something amazing. Experimenting is fun. And even more fun to eat!

Coconut butter and oil, peanut butter, nuts, seeds, and yoghurt provide heaps of fat to keep you sated. I mean serious amounts of fat, too – enough to get you brimming with energy for hours. This bowl also incorporates a variety of other benefits – fibre, minerals, vitamins, probiotics, protein, omega-3s, and antioxidants.

A sprinkling of selenium-rich brazils and a blob of unsweetened take this over the top – just for good measure 😉 I love the crunch of nuts with the swollen, thick ‘pudding’ matrix. Who wants a bowl of cereal, anyway?

The taste of this is almost smoky with the bitter cocoa, yet mildly sweet from coconut, nuts, and dairy. Earthy cinnamon and cool, tangy yoghurt add depth to the flavour . . . I know, I’m starting to blab like those silly food-show judges. How about this: it tastes good.

This recipe can be grain-free, gluten-free, low-carb, and egg-free.

Preparation time: 5 minutes (plus refrigeration)

Serves 1

Ingredients:

– 1 Tablespoon coconut butter

– 1 Tablespoon unsweetened peanut butter (I used crunchy)

– 1 Tablespoon coconut oil

– 1/2 cup unsweetened yoghurt of choice

– 1 Tablespoon cocoa powder

– 1/2 teaspoon cinnamon

– 3/4 teaspoon psyllium husks

– 1 Tablespoon ground flaxseeds

– 1 teaspoon chia seeds

– 1/2 cup milk of choice

– extra yoghurt, nuts, cinnamon, etc. (to garnish)

Method:

1. The night before you want to eat this, stir together the first three ingredients in your serving bowl. Mix in the yoghurt, followed by the remaining ingredients. Really squash any clumps! Cover and refrigerate.

2. The next morning, garnish as desired and enjoy! 🙂
