Custard Berry Smoothie

This is like drinking a bowl of icy cold custard, flavoured with berries and vanilla. Thick and creamy. Thirsty yet?

The egg yolks, yoghurt, and cottage cheese add a healthy dose of protein to keep you satisfied. Berries, packed with all their fibre and antioxidants, are a great way to colour the smoothie and add fruity flavour without too much fructose. Cinnamon adds sweetness and warmth, while vanilla enhances the custardness of the smoothie.

This smoothie takes a while longer to prepare than most, due to the custard which must be made beforehand. However, you needn’t worry about the custard curdling – if the egg yolks scramble in your pot, just go with it (as horrible as that sounds), because the blending later will obliterate any lumps. Plus, you can make the custard the night before and blitz everything together when you make this for breakfast!

This recipe can be gluten-free and nut-free.

Preparation time: 10 minutes (plus chilling)

Cooking time: 5 minutes

Serves 2 regular people, or 1 Fizzi!

Ingredients:

– 2 egg yolks

– 1 Tablespoon cornstarch or custard powder

– 1 teaspoon dextrose

– 1/2 cup milk of choice

– 1/2 teaspoon vanilla essence, or good pinch ground vanilla bean

– 1/2 cup cottage cheese

– 1/3 cup yoghurt

– 1/2 teaspoon cinnamon

– 1 teaspoon psyllium husks

– handful frozen berries of choice

– 6 or so ice cubes

Method:

1. Whisk the egg yolks with the cornstarch and dextrose in a small saucepan/ pot. Whisk in the milk and cook over a medium-low heat until thickened (whisking constantly). Stir in vanilla, transfer to a small bowl, and leave in fridge to cool.

2. Whiz the custard with remaining ingredients in a blender until smooth. Pour into glasses, top with more cinnamon, and enjoy! 🙂
