Flaxseed Cream Crunch


I’d like to make a special ‘shout out’ to my friend, Georgia Hogg. This dessert is dedicated to her, as thanks for being such a great tennis partner! I made it as a sort of celebratory treat after our great match this week, when we played as doubles partners.


This is the easiest dessert I’ve conjured so far. I’d even go so far to say it beats my “Satiety Salvation” (see my recipe in”Diet”) in terms of execution time! However, this still tastes like a dreamy, crunchy, chewy cream pie – or what I would imagine that tastes like. To be fair, I don’t think I’ve ever actually tried a cream pie, and to be honest, I don’t think I need to now. This is simply too good (oh, the fun of puns).


Despite tasting so amazing, this is pretty darn healthy. Flaxseeds provide plenty of omega-3 fatty acids, essential for the growth of your ‘brain tissues’ (I like to think this makes me smarter!), as well as fibre and protein. Nuts or seeds you choose to use will bring this alive with minerals, protein, and fats, and the cream adds more fats to keep you sated. Mmmm, cream.


Yes, you might have noticed that my cream looks a bit spongy. I will admit, I used ‘squirty’ cream – that stuff in the can you spray straight into your mouth! Well, I found a brand without fructose in the ingredients list, sweetened instead with maltodextrin. While I prefer pure dextrose in my recipes, it appears maltodextrin is also ‘fine’ (being basically just glucose). But by all means, use regular whipped cream if you like – it is lower-carb, if that concerns you.


There is a crumbly, cinnamony base; there is a velvety, heavenly layer of cream; there is a crunchy, sprinkled topping. What more need I say? That’s right. Nothing.

This recipe can be gluten-free, grain-free, egg-free, low-carb, and nut-free.

Preparation time: 2 minutes

Serves 1


– 3 teaspoons ground flaxseeds

– good pinch cinnamon

– big dollop whipped cream (or ‘squirty’ cream!)

– chopped nuts/ seeds of choice and extra cinnamon, to garnish


1. This is really hard. I’m warning you.

Mix the flaxseed and cinnamon in a small glass. Top with cream and garnish as you like. Next . . . oh, wait, it’s done! Enjoy 🙂
