For those times when you’re alone, sad, and craving chocolate. I do understand.
This gooey, fudgy pudding takes away the dreary weather and gloominess (well, not really, but this does taste pretty good!). Virtually fructose-free, gluten-free, and delicious, why say no?
This recipe can be gluten-free, egg-free, and nut-free.
Serves 1
Preparation time: 5 minutes (plus cooling)
Cooking time: 1 1/2 minutes
Ingredients:
– 1 heaped Tablespoon butter, softened
– 2 Tablespoons cocoa powder
– 1 Tablespoon dextrose, or to taste
– 1/2 teaspoon vanilla essence
– 2 Tablespoons gluten-free flour
– pinch baking soda
– boiling water
– yoghurt, milk, and berries, to serve
Method:
1. Mix together the butter, cocoa, and dextrose in a microwave-safe bowl. Stir in the vanilla, flour, and baking soda, adding enough water to form a paste-like batter.
2. Carefully pour over around 1/2 cup boiling water (don’t stir!). Microwave on high power, uncovered, for 1 1/2 minutes. Keep an eye on it so it doesn’t overflow! Let cool for 2 minutes so the sauce thickens.
3. Serve with yoghurt, a splash of milk, frozen berries, or whatever you fancy. Enjoy! 🙂
