Nutty Chocolate Slice

If you’ve entered the health world for even a millisecond, you’re bound to have come across “Bliss Balls”. Those cute, nutty, often coconutty bites are deliciously moreish. However, the dried fruit that usually binds them together is absolutely laden with hidden sugars.

So, step aside from the norms and give this slice a try. Each piece is like a fruit-free bliss ball, minus the sugar and topped with extra chocolatey decadence!

This recipe can be gluten-free, grain-free, egg-free, dairy-free, vegan, and low-carb.

Makes around 18 pieces

Preparation time: 20 minutes (plus freezing)

Ingredients:

– 1 handful almonds or cashew nuts (I used a combination)

– 1 handful thread coconut

– 3 Tablespoons smooth peanut butter

– 1 rounded Tablespoon cocoa powder

– pinch stevia, to taste

– 1/2 teaspoon vanilla essence

– 3 Tablespoons coconut oil, melted

– 3 scant Tablespoons coconut powder, extra

– extra stevia, to taste

Method:

1. In a food processor, blitz together the nuts and coconut until finely ground. Add the peanut butter, cocoa, stevia, and vanilla, processing until the mixture clumps together.

2. Line a loaf tin with baking paper. Press in the nut mixture, flattening the top. Freeze.

3. Stir together the coconut oil, extra cocoa, and enough stevia to satisfy your sweet tooth. Pour over the slice in the pan. Return to the freezer until just set, then slice into small pieces. Keep frozen, and enjoy! 🙂
