Oranges load this with Vitamin C, Weet-bix and psyllium fibre, chia seeds and flaxseeds omega-3s and protein. I actually added a spoonful of cream cheese to my blender because we only had light-blue-top milk left in the boarding house (I almost threw a fit). This upped the fat and creaminess, so all was well!
If you have any yoghurt, it would go wonderfully in this (or on top). Cinnamon really sets off the tangy orange, and crunch from nuts/ seeds turns this a culinary adventure.
The sugar content of Weet-bix is very low, so I don’t worry unduly. You can also buy different brands of wheaten biscuit-style cereals – look for one without added sugar.
This recipe can be vegan, dairy-free, egg-free, and nut-free.
Serves 1
Preparation time: 5 minutes (plus refrigeration)
Ingredients:
– 1 cup milk of choice
– 2 Weet-bix
– 1 Tablespoon ground flaxseeds
– 1 Tablespoon chia seeds
– 1 teaspoon psyllium husks
– 1/2 teaspoon cinnamon
– few drops vanilla essence
– 1 small orange
– nuts, seeds, etc. (to garnish)
Method:
1. The night before you want to eat this, place all ingredients (except orange and garnishes) in a blender. Blitz until fairly smooth, then zest in the orange skin (washed!) and blend again. Pour into a bowl, cover, and refrigerate.
2. The next morning, top with sliced orange, cinnamon, and nuts/seeds as desired. Enjoy! 🙂
