Weet-bix make a great replacement for porridge when you’re running low on time. Sure, no one likes them soggy – but in pudding form? So good.
All you have to do is mash together a bunch of ingredients and swirl through some easy peanut butter sauce. Quick, delicious, and loaded with nutrition.
Peanut butter provides healthy fats, protein, fibre, Vitamin E, niacin, folate, magnesium, and copper. Weet-bix (although containing a minimal amount of sugar) add filling carbohydrates, cocoa antioxidants, psyllium fibre, and flaxseeds protein, fibre, and omega-3 fatty acids.
You can also make this the night before, and refrigerate your prepared pudding. It will, however, get thicker, so be sure to add sufficient milk!
This recipe can be egg-free, dairy-free, and vegan.
Serves 1
Preparation time: 5 minutes
Cooking time: 2 minutes
Ingredients:
– 2 Weet-bix
– 1 cup milk of choice, or more for your desired consistency
– 1/2 teaspoon cinnamon, plus extra to garnish
– 1 Tablespoon peanut butter
– 1-2 Tablespoons cocoa powder (I like 2)
– 1 Tablespoon ground flaxseeds
– 1/2 teaspoon psyllium husks
– 1 teaspoon peanut butter, extra
– 2 scant Tablespoons milk of choice, extra
Method:
1. Pour milk over Weet-bix. Add remaining ingredients except extra peanut butter/ milk. Set aside.
2. Meanwhile, microwave together (on high power) the extra peanut butter and milk in a small bowl for 1 minute. Stir well, then cook again for 30 seconds. Stir.
3. Mash together the Weet-bix mixture until smooth. Spoon over the peanut butter sauce and sprinkle over cinnamon. Swirl together with a spoon, and enjoy! đŸ™‚
