Peanut Chocolate Weet-bix Pudding

This thick, creamy pudding bowl will keep you full all the way until lunch. I sometimes steer away from excessive carbohydrates, but today I had swimming sports and interschool tennis – fuel was needed! This was a great breakfast to get me off to an energetic start.

Of course, I’m a huge fan of vegetables for breakast. Whether I’m sneaking them in with hidden cauliflower, carrots, or hard-core broccoli, the little nutrient-loaded plants are sure to lurk in most of my dishes! This wonderful pudding boasts a healthy helping of baby spinach – perfectly disguised by chocolate.

I added a nice blob of peanut butter in mine to provide protein, fats, and minerals, as well as that moreish taste. Since I had run out of unsweetened yoghurt, I made do the toppings of chopped brazil nuts and whipped cream. I know, what a drag.

Milk – depending on your choice – can add plenty of protein, calcium, and fats; cocoa provides antioxidants; psyllium gives fibre; flaxseeds thicken the mixture with fibre, omega-3s, protein, and minerals. Weet-bix are one of the best cereal options you can buy. They contain minimal fructose (approximately 1.4 grams per 100 grams, estimated from the nutrition label on my box). Plus, they’re packed with fibre and healthy carbohydrates.

I prepared my pudding the night before and refrigerated it. This made the texture super thick! However, you can also blend this and drink it straight away as a sort of smoothie.

This recipe can be dairy-free, vegan, and egg-free.

Preparation time: 5 minutes

Serves 1

Ingredients:

– 1 cup milk of choice

– 1 scant Tablespoon peanut butter

– 2 Weet-bix

– 2 handfuls baby spinach leaves

– 2 Tablespoons cocoa powder, or as desired

– 1/2 teaspoon vanilla essence

– 1 teaspoon psyllium husks

– 1 Tablespoon ground flaxseeds

– 1/2 teaspoon cinnamon

– nuts, cinnamon, cream, yoghurt, coconut cream, etc. (to garnish)

Method:

1. Put all ingredients in a blender. Blitz until completely smooth – you want to completly pulverise the spinach! Pour into a bowl and refrigerate overnight (or drink straight away). Garnish as desired, and enjoy! 🙂
