Quick Granola

Do your ever find yourself wishing for a fresh, crisp bowl of homemade granola, but can’t find the time for oven-baking? Do you ever wish there were a healthy, delicious granola without all the added oils and sugars? Well now you can make your own, customised exactly to your tastes and needs, for a fraction of the price and in under 5 minutes!

I loaded my granola with nuts, seeds, whole grain oats, coconut, and cinnamon. Feel free to omit anything you can’t eat or don’t like, and eat with whatever you like. I served mine on top of thinly sliced grapefruit (from my tree), a dollop of homemade yoghurt, milk, and cinnamon.

Nuts contain healthy and satiating fats, protein, and fibre, and provide so many amazing health benefits! They help lower blood pressure and cholesterol, prevent heart disease, and each type offers a variety of vitamins and minerals. I eat 3 Brazil nuts a day, for essential selenium (something we have a shortage of in New Zealand!), and included them along with almonds (known for their calcium and weight-loss promoting properties) and hazelnuts (packed with vitamin E).

This recipe can be gluten-free, vegan, and egg-free.

Preparation time: 2 minutes

Cooking time: 2 minutes

Serves 1

Ingredients:

– 1 Tablespoon each of sunflower and pumpkin seeds

– 1/2 Tablespoon each of sesame and chia seeds

– 1 Tablespoon wheat germ, optional

– 1/2 teaspoon cinnamon

– 1/3 cup whole grain rolled oats (use gluten free if needed)

– 1-2 Tablespoons thread coconut/ coconut flakes

Method:

1. Combine all ingredients in a microwave-proof bowl. Microwave on high for 1 1/2 minutes, stir, then 1 minute, and stir again. Cook for a further 30 seconds/ minute, depending on your microwave’s power and how toasted you like your granola.

2. Serve with sliced fruit, yoghurt, milk, or whatever! Enjoy 🙂

  1. Any ideas to sweeten this? use a bit of rice malt syrup when toasting?

    • Yes, definitely! Rice malt syrup would be lovely in this, if you like sweeter granola, and a drizzle on top might be nice, too 🙂
