Quick Vegetable Curry (for one!)

Ever need a quick, tasty, nutritious snack or meal? Sure, there are heaps of quick-fix foods you can turn to, but I know lots of them leave you feeling bloated, guilty, and slightly ill. Sometimes, you just want a proper meal – but what about time restrictions? There’s an easy solution.

If you like really spicy curries, this is for you. If you don’t, this is also for you. Whaaa . . . ?

Just add more chilli powder as you see fit! That metabolism-boosting spice makes an appearance at every savoury meal I eat – I’m actually not kidding – and I know how much it enhances my food. But, if you can’t stand the heat, just use a mild curry powder. Done.

I added some chopped ham quiche to my curry for protein and flavour. Feel free to throw in any leftover meat or vegetables lying around – shredded, roasted chicken would be fabulous, as would a handful of frozen prawns. Stir in an egg before the final minute of cooking for a vegetarian option, or if you’re vegan, toss in a handful of canned (drained) chickpeas.

Broccoli and cauliflower are absolutely lovely in this dish, and so easy when you just pour them out of a packet! Packed with a heap of fibre, vitamins, and minerals, they also help prevent certain cancers and aid digestion. Don’t have any? Use frozen green beans instead! No excuses.

This recipe can be gluten-free, grain-free, dairy-free, nut-free, low-carb, vegan, and egg-free.

Preparation time: 2 minutes

Cooking time: 4 minutes

Serves 1

Ingredients:

– 2 handfuls frozen broccoli and cauliflower florets

– 2/3 cup coconut milk

– 1-2 teaspoons curry powder of choice

– big pinch chilli powder, optional

– good grinding black pepper

– leftover meat, eggs, chickpeas, etc.

Method:

1. In a microwave safe bowl, toss all ingredients. Microwave on high power for 2 minutes, stir, and microwave for a further 2 minutes (or until hot and cooked). Enjoy! 🙂

  1. I attempted this dish today – firstly what and EASY, CHEAP and QUICK Lunch! not to mention YUM! Unfortunately I didn’t have the beast ingredients (next time will add meat) but this is great for lunch on the go, I added frozen mix to coconut milk and curry in a flask this morning at home and then heated at work for lunch!
