This recipe can be gluten-free, grain-free, nut-free, and low-carb.
Serves 2
Preparation time: 5 minutes
Cooking time: 15 minutes
Ingredients:
– 3 eggs
– 125 grams cream cheese, cubed
– splash vanilla essence
– stevia, to taste
– butter, to fry
– yoghurt, berries, cinnamon, etc. (to garnish)
Method:
1. Place all ingredients except butter/ garnishes in a blender, and blitz until smooth.
2. Heat a small, non-stick frying pan over a medium-low heat with a little butter. Pour in about 1 Tablespoon of batter, cooking until the bottom is firm. Flip and cook until golden.
3. Repeat with remaining batter. Eat the pancakes with cinnamon, berries, or yoghurt, as desired. Enjoy! 🙂
