xThis morning, I decided to treat myself to some waffles and kiwi fruit. However, since I’m not really a fan of highly-processed, white, carb-y flour, I played around with my ingredients to make some super-healthy waffles. No grains, no gluten, and no white flour!
The eggs, chickpea flour, and coconut flour make these high-protein, lower-carb, and very satisfying. Top however you’d like – I used green kiwi fruit, a blob of coconut cream, nuts, sunflower seeds, goji berries, cinnamon, and a drizzle of rice malt syrup.
This recipe can be gluten-free, dairy-free, and nut-free.
Serves 1
Ingredients:
– 1/4 cup chickpea flour
– 1 Tablespoon coconut flour
– stevia or dextrose, to taste
– 1/4 teaspoon baking powder
– 1/2 teaspoon vanilla essence or a pinch of ground vanilla bean
– 2 eggs (free range)
– 1/2 Tablespoon coconut cream (optional, makes the waffles richer)
– 1/2 to 1 Tablespoon water
Method:
1. Stir together the dry ingredients in a bowl until well mixed.
2. Add the liquid ingredients and whisk very well, until no clumps remain. Let the batter sit for 5 minutes as you heat your waffle maker and prepare your toppings.
3. Add water to thin the batter, as needed (coconut flour is very absorbent!). Pour about half of your batter into the hot waffle maker, then cook until it reaches your desired texture (I like mine quite soft, but still browned). My batter made one huge waffle (I poured in too much!), and one smaller one, which I hid underneath – this recipe should make two normal-sized waffles if you’re more careful than I was!
4. Remove the cooked waffle, and repeat with the remaining batter. Top at will, and enjoy! 🙂
