This. Creamy, chocolatey heaven – that’s healthy enough for breakfast! The chia seeds are packed with protein, calcium, fibre, and omega-3 fatty acids, while the cocoa adds antioxidants.
I love a pinch of coffee and salt in my chocolate concoctions because these add an indescribable depth of flavour. I also topped mine with some buckwheat groats for delicious crunch. Just look at that glossy pudding. How could you say no?
This recipe can be gluten-free, egg-free, nut-free, dairy-free, and vegan.
Serves 1
Preparation time: 10 minutes (plus refrigeration)
Ingredients:
– 2 Tablespoons chia seeds
– 1 cup milk of choice
– 2 Tablespoons cocoa powder
– 1 teaspoon rice malt syrup, or to taste
– pinch salt
– pinch coffee powder
– dash vanilla essence
Method:
1. Stir together the chia seeds and milk in a large mug. Add the remaining ingredients and mix well, then cover and refrigerate overnight.
2. The next morning, tip the gelatinous mixture into a blender. Whiz until nicely smooth, then scoop into a small bowl. Enjoy! 🙂
