Deluxe Bliss Balls

Bliss balls are, well, blissful. But there are ways to make them heavenly.

Start with a centre of silky peanut butter fudge.

Wrap around a layer of chewy, nutty filling.

Smother in chocolate.

I don’t tend to sweeten my bliss balls very much, especially when making them low-carb. Just taste each component as you potter, following your buds and creating your own bliss. I shaped mine larger than comfortable for a single mouthful – you may halve the quantities for each ball if you prefer.

This recipe can be gluten-free, grain-free, egg-free, dairy-free, and vegan.

Makes around 15, depending on size

Preparation time: 30 minutes (plus chilling)

Ingredients:

Fudge:

– 100 grams smooth peanut butter

– 30 grams coconut oil, melted

– 1 Tablespoon granulated stevia of choice, or to taste

– small splash vanilla extract

Filling:

– 100 grams cashews and/ or almonds

– 100 grams thread coconut

– 4 Tablespoons coconut oil

– 20 grams cocoa powder

– 2 Tablespoons granulated stevia of choice, or to taste

– 3 Tablespoons coconut cream

– 1/2 teaspoon vanilla extract

Coating:

– 4 Tablespoons cocoa powder

– 4 Tablespoons coconut oil, melted

– 1 Tablespoon granulated stevia of choice, or to taste

 

Method:

1. Mix together all ingredients for the fudge in a medium bowl. Freeze until firm.

2. Meanwhile, for the bliss ball filling, blitz the nuts, coconut, and coconut oil in a food processor. When finely ground, add the remaining filling ingredients and process until the mixture clumps into one large ball.

3. Roll generous teaspoonfuls of the fudge into a ball. Take 2 teaspoonfuls of bliss ball filling and press evenly around the fudge. Repeat with the remaining mixtures, placing each ball on a baking-paper-lined plate as you go. Freeze until firm.

4. While the bliss balls harden, stir together the coating ingredients in a small bowl until no lumps remain. Dip each bliss ball in the chocolate mixture before returning to the plate. If you have extra chocolate, do a double coat! Keep the finished bliss balls in your freezer and enjoy!
